Geri Branch’s Chocolate Chip Cookie Recipe
Preheat oven to about 185 or 375
Take a 400g block of Danish butter
Cut off about ¼ to 1/3 to save
Soften the remaining 2/3 to ¾
Whip with mixer

Add:
¾ c. light brown sugar – beat until smooth
¾ c. white sugar – beat until smooth

Add:
2 eggs
1 teaspoon salt
¼ teaspoon baking powder
1 teaspoon baking soda
2 teaspoons vanilla
Beat soundly

Add:
2 ½ cups white flour
1 12 oz. package of chocolate chip morsels - and a few more if you like
A handful of peanut butter chips
A handful of white chocolate chips if on hand
Blend until thoroughly mixed.

Grease cookie sheets.
Drop onto the sheets by spoonfuls.
Bake approximately 10-11 minutes – Watch carefully with your particular oven heat.
I bake to soft cooked level. Barely brown and very soft.

Based on a recipe found in Big Oven.

Ingredients:
3/4 c. of melted and cooled butter
1 c. of honey
2 eggs, beaten
3/4 c. of chopped dates
3/4 c. of chopped almonds
3/4 c. of flour
1 tsp. of baking powder
1 c. of rolled oatmeal
1-1/2 c. of wheat germ
1/2 c. of powdered milk
1 tsp. of salt

Preheat the oven to 350oF. Grease a 9″x 6″ cake pan.
In a bowl, sift together the flour, baking powder, powdered milk and salt. Stir in the rolled oats, wheat germ, dates and nuts.
In another bowl, beat together the melted butter, honey and eggs.
Stir the dry ingredients into the wet ingredients just until blended. Pour into the prepared pan and bake in a 350oF oven for 45 to 55 minutes or until a toothpick inserted at the center comes out clean. Cool in the pan then chill for several hours (no need to remove from the pan) before cutting and serving.

Chocolate Chocolate Chip Cookies

Ingredients
1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Directions
Preheat oven to 350 degrees F (175 degrees C).
In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven (8 minutes is better--these cookies are best chewy), or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
